Here is a photo & email from a PCGN member with some advice on enjoying garden fresh produce even if the depth of winter!
"Here's a photo of Brussels Sprouts I picked on December 18th, long after the snow and deep freeze. An organic farmer friend mentioned that water in the brassicas doesn't form ice crystals, which can act as little knives cutting the cells. That's why you can pick frozen brassicas leaves and have them thaw beautifully. All these greens were frozen solid when I picked them, but reconsituted as if I'd picked them on a summer day!! So..... leave all your brassicas standing over the winter - great source of winter greens!!" - Anne Langdon - PCGN member
