This is the time of year where we are all starting to put our gardens to bed and enjoying the beautiful Fall colours, and if you are like me, trying to put away as much of the summer's bounty as you can to enjoy during the long dark days of winter.
I have been taken over by canning fever, and have put jars of salsa, tomato sauce, oven-dried tomatoes, pickles, pickled beans, pickled carrots, pickled beets, smoked paprika, peaches, pears & apples on my pantry shelves, and jars of pesto, bags of beans, kale, chard, cherry tomatoes, and berries in my freezer.
It has been really fun, and although the season is rounding out, it is not too late to get some food put away for the winter.
My overflowing pantry!
Gorgeous pickled basil carrots, just done last night!
